Sushi lunch!!! Went shopping last night so I got some sushi-grade salmon for lunch and dinner today! I made a roll with salmon and cucumber and cut some pieces for sashimi. I also packed a bowl of microwave sushi rice with some vinegar and rice seasoning, cucumber
and tomato salad and a fruit salad with grapes, strawberries and oranges… Delicious lunch!
Hummus! Topped with olive oil and red pepper flakes. I packed some whole wheat pita, carrots and cucumbers to eat with it.
Super healthy today! Some shrimp, salmon dip and crackers with tons of veggies and fruit (broccoli, carrots, red bell pepper, grapes and oranges).
Trying to be healthy with a salad… Spinach, cucumbers, carrots, bean sprouts, tomatoes and chicken. I’ve got the other half of my box packed full of grapes, strawberries and oranges!
Pho to go! I boiled the vermicelli noodle the night before and made a condensed broth so that I could just add hot water at work. The thin sliced ribeye was dipped in the boiling broth just long enough to turn pink. The pho salad has bean sprouts, Thai basil, cilantro, green onions, jalapeƱos and a lime. I also packed a sauce container with some sriracha to add in.
Time to play catch-up! This is a sushi lunch I packed last week - a roll with salmon, tuna, cucumber and carrot and some tuna and salmon sashimi on the side. In the other half of the box are some grapes and apple slices.
Double post! So today’s lunch is a big salad with grilled chicken, carrots, beets, yellow bell pepper and onion. I also packed a side of apples and a ziplock Baggie with some crackers and peanuts.
